    That is a Lodge cast iron griddle. It is an older one, probably bought 10 years ago and very well seasoned and almost smooth from repeated use. Walmart sells them, Bass Pro also, and they are a little different now but should work the same. You can get a reversible one that will put some great looking grill marks on various proteins (chicken, steak, even burgers). If you have ever done much cooking on cast iron you will know that the new stuff is NOWHERE NEAR as smooth and non-stick as your grandparents used back in the good old days. The manufacturing process is much different and the surface is not mirror smooth when you purchase any item from Lodge. To keep the fish from sticking I make sure the griddle is extremely hot and greased with real butter, also the liberal seasoning keeps the surface of the meat from touching the griddle and thus sticking. I also try to make sure the fillets are covered in melted butter when applying the seasoning, this helps keep them from sticking also. To clean the griddle I just scrape with a metal spatula while still screaming hot and remove with gloves to cool.

    The best thing to do with new cast iron is use some 360 grit sandpaper on it and smooth it out. Take off all that pre-seasoning junk off of there. Then fry something in it. Bacon or chicken or fish is best. 2 or 3 times and it will be seasoned good. Only one company in the states that makes a good non seasoned cast that I know of is Stargazer. Fields makes a good cast iron too with a good seasoning on it already.

    Thanks for sharing, I have got to try some fish tacos. Love the looks of those Lodge grddles. My son actually was in the Lodge plant last week. I think I have a couple of those griddles that have never been used in the basement, I need to dig them out.

    Looks good, where did you find the seasoning

    I might try cast iron, I have a cast iron pan. I see no reason why I could not put that in my gas grill

    Stargazer is super expensive...I have some old cast iron skillets that are well over 90 year's old and some that are 20 year's old with a ruff finish...No need to sand or do anything else to the newer cast iron skillets than to just start using them daily and they will be non stick in no time

    I picked up one of those griddles at a garage sale a year or so ago, now maybe this will prompt me to finally put it to use. Excellent post, pics, and tips. Thanks to all.
