Bab, are you talking about the solid, paste type of coconut oil?
I tried something new tonight. I used the same ol' cornmeal mix I always use but instead of peanut oil outside in the fryer I tried coconut oil and butter in the cast iron. WHOA!!! This is really good! To those of you who want I little bit of something different, I highly recommend this little change up.

Yep, that's the stuff. Google says the smoke point is 350 F, 100 degrees less than peanut oil but in the skillet mixed with the butter it didn't smoke and the filets got nice and crispy, I would just be a little careful not to smoke up the house.
