My son has a turkey friar that doesn't use oil. Turkeys are good in it, but we used it to do a prime rib for a group of guys and it was outstanding. Not sure how it would do on small fish. A whole salmon might be good.
Have you tried the "Baked Parmesan Crappie" recipe on this thread. It has had dozens of likes and comments, all very good. Bout as close to fried as you can get and wifey would approve.
