Tried this for the first time last night. Wifes been on a non frying kick for some time. She had done quit eating crappie fried. Tried this, and I had to share more than expected with her and our son who both loved it. Great alternative to frying crappie. Taste is awesome.

THANKS FOR THE RECIPE!!! One afternoon after work last week I stopped by my place on the way home and jigged up 4 nice crappies and headed for the kitchen. I used your recipe except I mixed ground oregano in with the thyme and I substituted olive oil for the butter and WOW did it turn out amazing. I WILL be doing this many more times from now on! For the side I added a little steak sauce into a microwavable bowl of Uncle Ben's brown rice and the meal was FANTASTIC!!! I really only needed 2.5 fish to be full but just had to eat the WHOLE portion because it was so good. (Didn't need breakfast the next day, man I was full plumb til lunch)

Is the Parmesan cheese used in the recipe dry or shredded?

I tried this recipe about 3 months ago and almost wish I hadn't. My wife won't let me cook fish any other way now and it is also great with chicken!!

This recipe taste great, the last few times I have added prego parmesan sauce with mozzarella cheese. Follow Longhorns recipe and on side burner warm parmesan sauce to a simmer. After fillets come out of oven place some sauce all over fillets and sprinkle mozzarella cheese on top. Place dish back into oven for 5 minutes or till cheese is melted. This goes great with texas toast.
