I have had people tell me the same thing " I normally hate fish, but they will eat it if I cook it" My go to fish breading is Shore Lunch Cajun Style if I am having a big fish fry. It is good stuff, not real spicy, but not bland either! This is making me hungry! I am going to try to bake me some crappie tonight!

I use 1 box of shore lunch regular and mix in 1/2 box of shore lunch cajun. I have been experimenting several years with different formulas and different brands and not telling the family what I am using until they tell me which one they like the best. That simple mix has won the popular vote.

House Autry Seafood Breader is the BEST I've ever had. It's what we all use around here.
As far as I know, it's only available in the Carolinas...... Sorry

Tried a new one last week, mix egg, milk, and Louisiana hot sauce. Dredge fillets in it, coat with breading of choice and fry. Probably my favorite to date.

Tried it with Frank's red hot as well, but it didn't have nearly as much flavor. Might've done something wrong.

I make my on breading using stone ground corn meal, flour, paprika, salt, and pepper. Soak the fish filets in buttermilk for several hours, then bread and fry. For COMMERCIAL breading, I prefer Andy's Breading.

Zatarans, Louisiana, and Andys in no particular order. I will beat a couple of eggs with some mustard to dip the fillets in first.

3 parts yellow self-rising corn meal mixed with one part flour. Add lemon pepper, paprika, garlic powder, onion powder and some fine ground black pepper. Mix quart of whole milk with one beaten egg. Dip filets in milk/egg mixture and dredge in dry mixture . Fry in 350 degree peanut oil.

I've about tried them all and they are all good, infact I have never met a crappie I didn't like. Easy to have good fish fry when your working with the steak of the lake.
Had some "slap yo mamma" spicy mix for the first time yesterday. And guess what, it was good to! But if I had to pick just one it would be Louisiana blue bag.
