Catch Clean Cook
Seems to be a catchy title on You Tube, and they seem to fricassee all kinds furry critters, fish, and fowl. So let’s do one here with some Panfish. First ingredient, the Pink Moon of April. When did we start naming each months Full Moon? I didn’t get the memo but see the evidence in the news and in the sky. Next up, the catching.
An ultra light rod and some bait are required for this step, preferably something fun. Next let’s measure/clean our catch, fisherman are notorious to stretch the truth about size….rulers don’t lie!
We are going to call that bigger one 9 in…. fisherman speak remember. Next step, clean, butter, and season fillets, I like to blacken mine on a screaming hot cast iron griddle. If it ain’t smokin it ain’t cooking. Fresh Florida Corn got an early start and will be used later.
Cooking doesn’t take long at all, so then we assemble the cut grilled corn with some fresh Pico and a chopped ripe avocado. Mexican Couscous is another easy side (from a pouch).
Assembly is fun, toast some tortillas, add fish, lettuce, cheese, and some hot sauce/ranch.
A good beer or two compliments this cook, and also the Cook
