• Foil packet crappie

Ok, think I got it now. Crappie fillets, salt and pepper, chopped green onion, a little minced garlic, 3 or 4 pats of butter, 2 or 3 tablespoons orange juice and topped with a sliced orange.
Fold the foil tight to make a packet and place in a 400 degree oven or on a grill. I cooked mine for 15 minutes but they were probably done well before that. Served over a bed of rice with some of the cooked juice poured on top of it all. My wife an I ate all that you see in one setting. Was mighty good.

Thanks for reminding me about this recipe. I have done it many years ago while camping. On the grill outside right now is the perfect time for this recipe, TOO HOT to heat up the kitchen and bake fish inside the house!!
