• Crappie Cakes Anyone?

    Man, these things are good! We had about 4 cups of leftover mashed potatoes from last night. I added;

    1 stack of saltines (crushed)
    2 beaten eggs
    2 tsp Old Bay Seasoning
    2 tsp Creole Seasoning
    2 Tbsp dijon mustard
    1 onion (chopped)
    2 tsp salt
    1 qt bag of filets

    Boil filets for 5 minutes in water with a couple of Tbsp of liquid crab boil. Drain and refrigerate so the meat will clump. Mix all ingredients then fold in the crappie. Make small patties and roll in Panko bread crumbs. Fry until brown.

    It's best to make all of your patties and place them on wax paper before you start frying them.

      These look great, my wife and I also roll our fillets in panko crumbs with beer batter before frying in peanut oil.
