    Default HELP !!!


    This coming Wednesday night we are having a big man feed at our church and I am cooking crappie for a 100 to 125 guys. I have never cooked for a group that big and have some questions. How many fryer's do I need? What is the best way to keep the fish warm? Any other suggestions would be appreciated. Thank goodness someone else is responsible for all of the other fixins.

    It can be done with 1 8 gallon cajun cooker but 2 would be better. Are you cooking the fries and hush puppies as well? I cook for 50 or so people almost monthly. I know yours is 2x the amount I do it but I just use one 8 gallon and cook fries, hush puppies, fried pickles and jalapenos. And sometimes i just use my 4 gallon cooker alone with that amount. 4 gallon takes me about 1 hour to cook 25 pounds. 8 gallon takes me half that amount of time. Fish can be kept in aluminum pan with aluminum foil (Of coarse with paper towels under the fried food. Or if you have 2 cookers you can do the fixins in one cooker and fish in another and tell people to get em while they are hot! Just dont let it be too stressful for ya. Gathering that big is for a good time....so have fun with it! Remember to pat your fish almost dry before mealing them ( I use a large beach towel believe it or not). Less meal comes off the fish in your grease and makes a prettier coating. Rice bran Oil does not transfer taste to your food and has a very high scorching point.

    It's better to have to wait a little for hot fish than to have cold fish waiting on you.

    The event was a huge success. We used The night to introduce and encourage men to attend weekly bible studies at our church. There was 105 guys there and they all brought big time appetites. We cooked over 300 crappie filets, whole bream, five pounds of catfish, fifty pounds of potatoes, and hush puppies. Several guys brought sides of baked beans, red beans and rice, cold slaw, potato salad and several deserts. I had four other guys help me cook fish, tators, and hush puppies. Hopefully, we will add a lot of new guys to our men's group's.
