    Default New batch of Summer sausages for fishing trips in the oven .


    This is a old photo but working on another batch of Summer sausages . Will eat good out fishing with some cheese and Ritz Crackers . I used 2/3 Deer meat (hams) and 1/3 Pork Loin . Should be done in a few hours . Some with Jalapeno Peppers and a couple plain .

    Local Wal Mart has Hi Mountain Summer Sausage kit (with seasoning , cure , and tubes for stuffing )on clearance. I add a bunch of fresh Jahapeno peppers to the grind . Best use 10 lbs Deer to 5 lbs pork loin . I cook mine on low temp (200 to 210 ) in the oven till internal temp reaches atleast 165 . Just don't cook high oven temps even though it takes several hours to cook cause you don't want fat running out and it getting dry .
