a few weeks ago i smoked a mess of different fish....had a crappie, few perch, king steaks, catfish fillets...had it all going. believe it or not the best fish in the whole mess by far hands down was the perch!

White perch? or tiger pearch? Im assuming white though cause we seem to catch many more of them. Those tiger pearch are some kinda good though. I need to try some smoked fish. Never have. Bet its good though.

I grilled some salmon & lake trout once on open foil. Used a touch of butter and lemon pepper. Tasted great. I have a weakness for smoked food. I may try that someday.
