As a boy in Florida long ago, roadside vendors used to sell smoked mullet. Those fish were smoked in old gutted out refrigerators but damn, were they good.

I have loved smoked fish ever since.

Ask your buddy Kunes, he smokes fish from time to time. I know he's posted about it on SC. Do a search for it and I bet you'll find it. He'd like to talk to you anyway....:D

I'm sure it will turn out great. We make a grilling sause that we use on our striper and dolphin that we grill. Last couple of years I have been trowing crappie on the grill with the sause too (lay out some tin foil with butter melted on it), it is UNREAL GOOD!!!!!!!!!! Has a different taste than other grilled fish. . . it is awesome. I'm sure smoking it will be right as well.

I plan on doing some crappie, in my smoker this winter. I do know the smoked catfish are great out of a smoker.
