I met a feller this weekend that uses a regular fillet knife that I'll put up against anyone with an electric. He was cleaning three for every one of my fish.
Back in the day he was a guide for salt water species in the keys.
Friggin' amazing.
He taught me some tricks that I'll have to practice when no one is watching so they don't see me butcher the fish until I get the hang of it.
