    Thumbs up Crappie cakes


    I know that there is a recipe section, but I wanted to give my Missouri buds the heads up on this wonderful recipe. My wife made some Crappie cakes Tonite, they were sort of like salmon patties, but with potatoes, cheese, onion, and of course crappie. I am not quite sure what was in them, but I will get the recipe. They were to die for!!!!!!!!

    He is right! Those are the best! We saw a similar recipe to that on one of the In Fisherman episodes. Something similar to what is shown here: http://www.in-fisherman.com/walleye_...kes/index.html

    yea that is the recipe all right!!!!! I was not able to ask her before I left for work this morning, but that sound alot like it. They are wonderful!!!!!!

    Tried this one tonight. Had a bit of trouble with getting them "golden brown" as the recipe described. But still pretty good. Hope this is not turning in to "H*ll's Kitchen".

    Hi, I'm bekellogs wife, he wanted me to come on and post the recipe he's been raving about.

    This is the link to the recipe I based mine off of

    Obviously the biggest difference is that I used Crappie instead of cod. Also the store had horrible parsley so I used thyme instead. I did not boil the fish, I poached it in lemon water along with the thyme. Make sure to use fresh grated Parmasan, the powdered stuff from Kraft just won't cut it. Mix all the ingredients together so it will form a nice patty (you may need to add an extra egg or more breadcrumbs) and then fry in crisco or canola oil (something with a high smoke point, olive oil would be a bad choice, it will just burn).

    In case you're not familar with poaching...
    Take a deep skillet with a tight fitting lid, fill it with water that just covers the bottom of the pan and set it to simmer. Put in your thawed fish in a single layer (the water should NOT cover the fish) and put the lid on. You're basically steaming the fish so it doesn't lose it's flavor and become waterlogged, which will happen if you boil it. I add a few tablespoons of lemon or lime juice to the water to give the fish a "fresh" taste after being frozen.

    This is a great way to use your leftover mashed potatoes, you can put them in the freezer and break them out along with the fish so you don't have to mess with peeling and boiling potatoes the day your cooking.
