I've never used an umbrella rig for crappie but I have no doubts that they would catch crappie. You could use any combination of baits that you currently use for crappie. The umbrella rig should be just as effective as pulling crank baits or flat line trolling with jigs. I would think the crappie looking up at a umbrella rig would just think they are under a pod of shad and go for it.
In Kansas we aren't allowed more than two hooks per line. One time on a guided trip to Norfork lake we used umbrella rigs for stripers and did catch some stripers. The guide used two umbrella rigs and a left and right planner board and trolled. He put the rigs out and placed the rods in the holders for us and we watched rod tips for fish on. When a fish was hooked we would grab the rod and start cranking while the guide never quit trolling since he didn't want to risk loosing the other rigs. I'm glad I went on the trip but its something I'll never go again since I didn't find that style of fishing enjoyable. Reeling in the fish while the boat continued trolling was like reeling in a log.
