    Default Help with meat smoker


    Hey guys, got a meat smoker from bass pro for Christmans from the in laws, and was thinking of using it this weekend. I love smoked foods, but have no idea of how to get started. Anybody have any tip or secrets? Thanks in advance.

    Depends on what you plan to smoke. Starting out, a brisket, ribs, or even a pork shoulder are pretty easy to do with a little rub.

    Is it a gas, electric, or charcoal smoker? Also you have to decide what wood you want to use to flavor your meat. I use pecan, but others may use hickory, apple, mesquite, etc...

    Keep your temp low and cook your meat slow. I like to use wood chips, hickory or apple, but everybody's got their own preference, just remember to soak em first. I keep a spray bottle of apple juice handy and give ribs, turkey breasts or whatever we're smoking a squirt every so often to keep it moist. If you use a rub, get your meat ready the night before. The longer it's in the seasoning, the better it's gonna taste.

    What kind of smoker is it one with a wood box on the side where you burn there and cook over inderect heat or one of the kind you put the meat over the heat?

    As for a smoker, it's all about indirect heat, cooking low and slow for a long time. The dry rub is the key. I do spare ribs for 4-6 hours depending upon the temp. If you think you're cooking too hot too fast then pull it. They've got the flavor. Put your meat in a 9x13 and cover with foil and put in the oven for 2-4 hours at 180-220. The results should be very tender and moist.
