Hello Grilled Cornell Chicken!
Made this one for the first time yesterday. It was pretty darn tasty.
I used a whole chicken butterflied and then cut in half but you could probably use it on any cuts of chicken.
CORNELL CHICKEN MARINADE
INGREDIENTS (enough for 4 chickens!)
1 egg
1 cup vegetable oil
2 cups cider vinegar
3 tablespoons salt
1 tablespoon poultry seasoning
1 teaspoon ground black pepper
I added some lemon juice and minced garlic.
DIRECTIONS
Crack the egg into a medium bowl and whisk until beaten. Slowly whisk in the oil until fully blended. Then whisk in the vinegar, salt, poultry seasoning, and ground black pepper. Set some of the sauce aside to use for basting while grilling. Place chicken in shallow baking dish, and coat with sauce. Cover, and marinate in the refrigerator for 24 hours.
(I marinated mine for 6 hours and it was great. More the merrier)
When I put it on the grill, I put it skin side down directly over the heat for 6-7 minutes for a good searing. Added some wood chips then, I flipped everything over and cooked it indirectly for about an hour (to 180*). Basting it every 10-12 minutes or so. It was just starting to fall apart when i took it off the grill. (Last ten minutes were over the coals to crisp up the skin)
