I know this post is a little old but thought I'd carry it back up top. If I am trying to keep crappie fresh for a fry later in the week or weekend I will usually change out the water atleast once during a 5/6 day span, usually on the third day but absolutely on the fourth day. They'll be find come fish fry day.

I have found that season the water with whatever spices you like the fish take on the taste a lot better while it's soaking a few days.
I've had fillets in the freezer for over a week, thawed them out and they were perfectly fine so it shouldn't be a problem.

I usually let mine soak for 2-3 days before I eat/freeze them. Sometimes for 4 days but I wouldn't let them go for much longer than that.

I worked for Hyatt hotels years ago, and we had three restaurants that served TONS of fish. The best way to store fish for extended periods of time, is to keep the fish dry, (i.e. not soaking in water), try using large zip lock bags or commercial size plastic wrap is best...put the fish on the bottom, and LOTS of ice in the bag or on top of the plastic, changin it out as needed to keep ice, not water on the fish. Keeps it very cool without freezing, and will hold much longer.
