    I'm drooling on my keyboard!!!!!
Those steaks look absolutely delicious! I'm thinking maybe I'll try that next time we get a couple "snakes". Did you use any kind of brine, or just smoke 'em natural?

Last BIG pike we got (caught by my wife) is now hanging on the living room wall.

You might just have to send me one of those steaks. I've never had any kind of smoked fish, much less NP, but they do look delicious. :D

Barndoor, I used maple and hickory this time. Usually I use just hickory but I decided to give maple a shot. It came out pretty good.

For brine I use 1/2 cup of salt and 1/2 cup sugar per qt of water along with 1/2 cup brown sugar. You don't want to over do the brine on those. The meet is pretty delicate.

I might also add, don't smoke any more then you can use up in a day or two at the most. There isn't much, if any oil in (snakes) and they dry up in a hurry. I just ate the last piece today and it was already dry.
Makes me kind of want a beverage. If you know what I mean.

    Gabowman,,, maybe next time.
