I do these with a smaller tail for Bream and Crappie and a slightly larger tail for White Bass and Smallmouth.

Looks OK to me. I get worried when the tail seem too long, but under most times they are OK, but if they are short striking they will only get the tail and not the hook. I use longer shank hooks to help with that problem on my Clousers. Look at my Sig, that is a long shank fly tying hook.
I don't know what you can do about that with a jig head like you are doing. MY 4x-long shanks help with that a lot. I use a longer shank on all of mine except the popper hooks I told you about.
I'd rather it be too long than too short. You can always trim it with a pair of scissors.
