Yep - you'll find a ton of recipes in the cooking crappie forum. I like "joe's healthy fish fry" (there's a thread with the recipe) - because it's MY recipe.
it's all a matter of personal preference. My family likes battered fish, some folks like breaded fish. Some folks like adding hot stuff for a little "kick" and some folks add just a little salt and pepper.
My recommendation is this... browse through the cooking crappie forum, and also hit the recipe section from the crappie.com home page, and find every recipe that sounds like you might like it - then try them all to find which one you like best. It might be a hard decision, though, because crappie is delicious just about any way you fix it.
350 degree peanut oil. shake fillets in a bag of yellow corn meal mix. Not yellow corn meal...yellow corn meal MIX!
cook 'em till they float. If you want more seasoning, season them BEFORE you roll them in the corn meal MIX. you can't hardly put enough seasoning in the corn meal MIX itself to taste it.

What is the diff between meal and meal mix?
JOHNS
one probably has some flour in it.

Corn Meal Mix is what "cornbread" is sometimes made from. Personally, I use plain Quaker Yellow Corn Meal, as a coating for fish. Skillet fried Cornbread is a "side dish", for me. But, it's all a matter of personal preference.
