mix 2 table spoons of prepaired mustard and a teaspoon of sourcream together coat filets with this mixture.
then roll them in crushed cracker crumbs.
get you a good candy therometer to hold the heat of the oil.

heat oil to 375 degrees
dont crowed your pot with filets. i also cut filets in one inch strips so they cook evenly on all sides.

cook filets to browness you desire.
