This is some really good stuff and pretty simple to make.

The breast from 3 ducks.
2 tbsp. butter
2 tbsp. extra virgin olive oil
2 tbsp. of dried and chopped thyme
2 peeled garlic cloves
2 shallots
Salt & pepper to taste
2 cups red wine
2 tbsp. flour

1. Wash duck under cold running water; dry with paper towels.
2. Melt 2 tablespoon butter and 2 tablespoon oil in skillet over low heat.
3. Turn to medium high and let butter foam a little.
4. Toss in duck breast, thyme and garlic.
5. Brown duck all around about 10 minutes.
6. Add some chopped shallot, salt and pepper.
7. Swish around 30 seconds.
8. Turn heat to high and add 1 cup of red wine and scrape the residue.
9. Let simmer for about 5 minutes.
10. Transfer everything to a roasting pan and cover with lid.
11. Roast 1 hour on 350.
12. Turn meat add 1 cup of red wine then roast for 1 1/2 hour more.
13. Remove meat and pour the liquid back into the skillet.
14. Bring liquid to a boil. Stir in 2 tbsp. of flour to thicken.


This is some really good stuff and tender too.

This can also be used with other meat as well.
