Three very simple ones at my house that the kids also love.
#1 - 1 Part Yellow Corn Meal
1 Part Flour
Couple Eggs
Just like everyone else does, drop the fillets in the egg and roll them around in the mixture. Pan fry and add salt. (Also used plain saltine crackers chopped up in a food processor and it was also great)
#2 - Dry off the fillets and spray a casserole dish with pam. Cover the fillets with Old Bay seasoning and bake for 8 minutes at 350 degrees. Taste like it cam straight from the ocean it is so good.
#3 - Same as above, but cover the fillets with crushed pecans instead of Old Bay seasoning. Taste like it came from a five star menu.
#4 - Same as #2 except I cover the fillets with Pace Picante sauce. I swear it taste like an enchileda. Add some black beans and a little Seniorita and it will be a perfect night.
