Ingredients needed:
1 Pound Crappie or other fish
3 eggs
3 Tblspoons flour
salt
pepper
garlic powder
hot oil for frying
To prepare, spread a pound of Crappie fillets in a glass baking dish. Bake at 350 degrees for 15-20 minutes or until fish flakes easily. Crumble fish into a bowl, and mash with a fork.
In another bowl, beat three egg yolks, saving the egg whites. Stir in 3 tablespoons of flour, 1/2 teaspoon or salt and half teaspoon of pepper, 1/4 teaspoon garlic powder and cayenne pepper. Beat the egg whites until stiff, and fold them into the mixture. Then drop spoon-size lumps into peanut oil heated to 375 degrees. Fry until golden brown, and serve with your favorite dipping sauce.
We also use catfish this way and bass sometimes too. Its just a bit different when you get tired of the same old fried fish over and over again.
The nuggets are so tasty, and you can add other ingredients if you like as well. I use a cajun seasoning in mine and parsley flakes sometimes too.

I guess this could be a "healthy" alternative to the processed chicken nugget from McDonalds for my kid...
