Anybody recognize these lovely fish. Chinese seem tickled to death to catch them.

Where I fish below the generator plant on the Arkansas River, several of the Asians don't turn much loose. Carp, buffalo, and drum are all game fish to them. I know they come from a different background and food is food to some of them. I'm sure they know how to prepare them and make them into tasty dishes.
My wife's father is from Vietnam and when I would catch several catfish, he always wanted the heads. They make soup out of them lol. I never got to try it.. which I don't know that I feel left out.

I figure if we ever get hungry enough we will figure out how to cook them. The Chinese will steam cook the fish with the heads on. I have never had Asian Carp but I have eaten fish over there. In the restaurants they keep the fish live in fish tanks and you point to the one you want cooked. Lots of Asian Carp swimming around but I have always avoided them and pointed to the Flounder. Doesn't taste too bad but hard to eat fish without fries and hush-puppies.

I fillet the Silver fish just like any other fish, then cut on a diagonal between the y bones. Bread and fry, once cooked you simply bend the the piece of fish in the middle and the y bone pops out, pull it the rest of the way out and you have a delicious boneless piece of meat. They only eat plankton so its a very clean white meat, and very good eating. We also eat the back straps out of gar that taste like chicken
