Lookin' good, but even better filletin' first like Crappie Texan says! Sometimes tho' the crusty skin make them taste really good too, somewhat like the fried whole catfish you get in restaurants.

I know the picture kinda blurry but if you look real hard at the left of the pan, you'll see the fillets. I filet one side and keep the other whole, cause I like to eat right down to the bone. My wife likes the filets only, best of both worlds.

Yaknow, after studyin that picture a little while and remembering some others like it I've seen in here, I belive that we're gonna fry up some crappie this year just scaled and gutted. I gotta see what ya mean. I know trout are good that way!

...that is the question.
I have fileted my fish for years. But, recently I have been wanting to catch a mess of bream and skin em like my Grand father used to then fry them bones and all. I think it is an omen this discussion came up. Plus...I was digging around in my garage this weekend and found a skinning apparatus that rolls the skin off of pan fish. I havn't seen one in years. I don't think they sell them anymore.
Good idea filetting one side for you wife though.
