Paddle or electric motor? Some inflatables have pretty inefficient hulls, making paddling pretty tiresome. The electric motor won't mind, but it will use the battery down much quicker than a sleeker hull.
Lot of folks drift fish using the wind and if necessary drag a drift sock, or bucket too slow them down when the wind is too strong. Bill Dance did a whole show on crappie fishing while drifting across a lake.

My yak is a hard shell, not an inflatable. I have 2 rod holders up front and can balance 2 more rods off the sides. I drift as much as possible. If the wind gets up a bit I'll drop a 1 lb lead ingot on a cord to help slow me down.

I paddle my kyak while trolling,if it's windy I drift,if I go too fast,I use my paddle to slow me down,I that fails, to work,I anchor off and dead stick or drop shot fish.always evolving.

Gosh it was several years ago when I saw it, would not know where to begin. I remembered it mainly because it was such a simple method, plain old jon boat and small outboard. He would run to the upwind point where he wanted to begin and let the wind push him across. Very light breeze, barely moving and the crappie were hitting jigs they were dragging along.
