this is what my wife and I are currently using.

FoodSaver V2244 Vacuum Sealer in Black-FSFSSL2244-P00 - The Home Depot

We wanted something inexpensive to try out and see if we liked it. So far we do. it will over heat and need to cool down if you try to vac u seal too many in a row. The only two times it has happened to us, was when we brought home 36 and then 40 fish to clean a store. The replacement bags are not too difficult to find in our area.

Heard the food saver name a lot over the years. A friend in TN smokes a lot of his own meats and uses his a lot.

I have been using the Foodsaver brand for years. My friend I fish with in Oregon had one in the 90s and we would seal and freeze a cooler full of salmon for me to bring home. I finally got one myself and now on my second one. The bags are easy to find, Walmart and others carry them. I buy the rolls and cut to size.

What's the best way to do fish in one? Freeze them first?

I use a food saver. I like to "firm" my fillets up in the freezer first on a cookie sheet. then lay out in the bag and let it go.
