    Default Spicing it up a little


    Don't get me wrong, we love just good ol' fried crappie fillets with taters and hushpuppies, but sometimes have to spice it up a bit. If any of you are fish taco fans you just can't beat crappie fillets!! But I will tell ya, the slaw the wife makes to put on them really set it off. Add a little cheese and sriracha sauce and you are good to go!!

    She sent over to me at office so here ya go....

    Dressing for Slaw:
    ½ cup mayonnaise
    1 Tbsp sugar
    1 Tbsp loosely packed orange zest
    1 Tbsp rice vinegar
    1 Tbsp coarse grained mustard
    2 tsp Soy sauce
    2 tsp Asian hot chili sauce (we use Sriracha)
    ½ tsp sesame oil
    ½ tsp finely grated fresh ginger

    Slaw
    4 cups shredded green cabbage (we sometimes just use the premade bag slaw)
    4 cups shredded red cabbage
    2 red bell peppers (sliced)
    1 cup peeled and thinly sliced jicama
    ½ cup loosely packed fresh chopped cilantro
    ½ cup fresh corn kernels
    2 green onions, sliced

    Simply mix all ingredients for dressing together .Then mix all ingredients for slaw and mix with desired amount of dressing. Dressing can be kept chilled for up to one week.

    No problem...us too!! I do think she does vary the ingredients some to her liking. She hasn't ever been one to stick by a recipe but I think that is what makes her a great cook sometimes!! Hope you like it.
