    Default Deep fried crappie




    This is the best way that I have found to fix crappie. I really do not like the corn meal recipes. Try crappie this way.....just once! I always fix the fish for family and friends this way. (My wife does the KP)

    You will need:
    vegetable oil (liquid)..amount depends on size of deep fat frier
    approx. 1# crappie (fresh best & should be easy for this group)
    2 cups of flour (approx)
    2 cups of finely crushed saltines (approx)
    1 egg
    1/2 cup milk
    1 Tablespoon cayenne pepper (more or less to your taste)
    salt to taste
    1 Beer (ice cold and your favorite)

    Mix the flour and cayenne pepper together in a bowl.
    Mix the egg and milk together in another bowl.
    Place the crushed saltines in another bowl.
    I like to cut each fillet in two or three pieces. Place several fillet pieces into the flour/cayenne mixture. Shake off the excess. Then place the fillets into the egg/milk mixture. Let the excess drip off the fillets. Finally dip the fillets into the crushed saltines, shaking off the excess, and then place into the very hot oil. Take the fillets out when they are golden brown (3 or 4 minutes) and place them on a paper towel and plate to soak up excess oil. Salt to taste or wait until they are served, and then everyone can salt to their taste.
    Repeat until all of the fillets are fried. By the time the secoond batch is done you can be sneaking a taste of the first batch!
    One reason we like them this way is they seem to retain a lot less cooking oil than frying them in a pan.
    No, I did not forget about the beer. You were supposed to be drinking it while the fish was frying.
    This recipe may be similar to others, but think you will like the way the fillets cook up this way!
