    Default Crab Meat Stuffed Jalapenos (Texas Popcorn)


    1 lb flaked crab meat (2 cans) 1/4 tsp salt
    1 lb jalapeno peppers 1/4 tsp black pepper
    2 tbsp ea, finely chopped 1/8 cayenne pepper(optional)
    green bell pepper, onion, and dill pickle 1 clove minced garlic
    1/4 cup cracker meal (bread crumbs) 1/4 cup milk
    1 beaten egg (breading mixture)

    Cut jalapenos in half lengthwise. Disacard pulp and seeds and rinse carefully. In a large mixing bowl, combine remaining ingredients except breading mixture. Stuff pepper halves with crab mixture and press stuffing around pepper. Set peppers aside. To prepare Breading mixture, place 2 cups craker meal (bread crumbs) in a flat pan. In a separte pan, mix 1 cup milk, 2 eggs and 1/4 tsp each salt and pepper. Dip peppers in mixture, then in cracker meal (bread crumbs). Repeat procedure. Deep fry at 365 degrees until golden brown. Drain on paper towel. Makes 30 horsd'oeuvres. Serve with a queso or ranch dressing.

    I know this is not a crappie recipe but man it is good!

    I'll bet you could substitute crappie fillets boiled in a good crab boil and it would be pretty good maybe?
    I have a jig with a face like this!:eek:

    I will have to try that out.
    I know the stuffed peppers I do are great. And I just use hot pork sausage and cream cheese in mine.

    This does sound real good. I bet we can modify this to a crappie recipe. How about if you replace the crab meat with crappie, just fill the jalapeno boat with the new crappie stuffing, then wrap with bacon, sprinkle with some mexican style seasoning mixture and bake 20-minutes or so at 325 until the bacon is done. I do this with cream cheese and it's great. The crappie stuffing sounds even better.

    Be sure when you are cooking with hot peppers to wear gloves or wash your hands. That pepper juice in your eyes will bring down the biggest chef.

    I know a guy that did 3 lbs of peppers on the smoker. Then after finishing up. Had a contact fall out. Well dumb me stick that baby back in. Yes it felt like I had put a hot poker in my eye.
    Sure did burn for about an hour.

    Made them today using white bass and they turned out awsome.
