    Default Very sad night


    Fresh caught alabama river blue catfish. Brined and smoked with hickory until flaky but moist. Woulda been the best ever - BUT - I forgot to rinse off the brine before putting them in the smoker - they are so sugary / salty that all I could do is sit and stare at them - yes that's the dogs bowl they are in....my lab didn't understand what the problem was!!

    Oh no , it happens , I got to messing with my boat the other day and left a pork loin on a little to long. Went to check trot line while we had the smoker going in the campground ran out of gas oops,

    I overcooked a tenderloin in the Masterbuilt yesterday. It's still good but not as good as the last one. I nailed it perfectly.

    I don,t know about the taste but boy those fish sure look mighty good-yum

    A couple of extra beverages and you wouldn't have noticed the salt and sugar.

    Now thats just plain sad. Bet the dog will be watching next time with his tongue hanging out. Speaking of beverages I believe I'll have one in memory of the catfish.
