    Default Old Fashoned Fig Preserves


    ​We have been picking figs all season and now that its over we decided to make a batch of old fashioned canned figs. Using a time honored simple recipe, here's what we did:

    Those look good, I make some every year. Slight misunderstanding years ago, my nieces and nephews still call it Pig preserves! LOL

    Cappy we make some each year only we don't cook them as much and use figs that are about one day before being ripe. This lets them stay whole through the cooking process. We also lighten up on the sugar somewhat because Linda is diabetic. Still taste great and go real good on a cold winter morning with hot biscuits, bacon, and eggs. Yum.

    My wife made a batch couple years ago and passed them round. Almost killed an old friend of my paw inlaws. He's diabetic and ate a whole jar at one setting :o

    We hadn't canned any in years. Hurricanes played hell with our tree. Every time it would get big enough to bare either a storm or a rare freeze or a kid with a weedeater ringing it, something always seemed to set it back. But the tree kept trying and sprouted again from the roots several times and now for some reason it is as big as it ever was and we got like 5 gallons of figs this season. I used the recipe I remember from when I was a kid and yall right it is sweet. Next year we will try a couple batches(Lord willing) and reduce the sugar to better fit our current healthier life style. We just did them the way I remembered. It sure is good though
