First, you gotta catch 'em and fillet them.
1. I pat the fillets dry on towels, rag then paper.
2. I line a cookie sheet with seran wrap, then place the fillets, (no touch)
3. I place the cookie sheet full of fillets in the freezer, and freeze 'em
4. Now you have frozen fish chips after a few hours
5. I now place the chips in recycled plastic butter (etc) bowls
6. I cover the bowl with seran wrap, before snapping the lid
7. This leaves the seran wrap hanging over the sides, good seal
8. Sometimes I bread them, before I freeze them
This takes time, but sure makes nice looking fillets.
I also do my squash, zucinni, okra, egg plant, etc. like this (slices)
They don't stick together. Just to share.

Did your Eggplants to ok this year? I didn't add any miracle grow to mine most of the summer and the bugs ate holes in most of the leaves until I finally got some 7 dust and sprayed the leaves. By then the summer was almost over. I raise those long thin egg plants. Icheband or something like that.
The summer squash did good. I had lots of that to eat all summer long. I still have two that I have yet to cook. Didn't grow any okara though. I grew zucinni squash the last 4 or 5 years but switched over to the yellow summer squash this year for a change. The tomatoes did well. I used a pickup truck load of aged horse manure from a nearby horse farm/stables. It really adds organic matter to my hard clay soil. But it didn't fertilize the egg plants as well as I thought it would. So back to the miracle grow once every two weeks or so.
Thanks for the tips on how to save them in the freezer. I sort of did one package of fish filets like you did only I put them in a zip loc 1 gallon bag. I will be eating them soon.
