    Talking Fruitcake addendum


    As reported on the main forum, I experimented with making a cookie based on the fruitcake recipe I posted. Results were excellent.

    Fruitcake Bars

    Cut all the ingredients in the fruitcake recipe in half EXCEPT:

    1/2 Cup candied cherries, halved

    Mix according to the original recipe and spread into a generously greased and floured 9 x 13 inch baking dish.
    Bake for 45 minites at 300 degrees. Test with toothpick
    Let cool for 20 minutes and cut into 24
    (about 1" x 3") bars. Move bars to a rack and allow to cool completely.

    Melt 4 oz white chocolate according to package directions and drizzle over bars. When fully cooled, store in airtight container.
