Cool thing to do. Never tried summer sausage. Got a good recipe or way of making it
A friend of mine makes a kit and we use about 25 percent ground pork shoulder to 75 percent ground deer. Then mix with the seasoning and stuff the casing and let cure for two days in the fridge. I smoke it for three hours at 300 degrees and the get some good cheese, crackers and cold beer.
