    saw a program on the Discover channel that high lighted big heads and silver asian fish. the guy quickly filet a big head and fried it up . I wish there was a video on how to clean one. Any one know of a video/ In IL there are millions of the big heads. he had it filet before you could see how

    My wife and I tried it at the Illinois State Fair last year and it was nasty. Took one bite and spit it out in the garbage. You can polish a turd but it's still a turd!

    We had a seminar at my shop recently and fried up some silver carp. There was a lot of waste from the filleting but it was very tasty when breaded and fried and everyone who tried it liked it. We will probably be frying some at our KY Lake shindig next month.

    I thought they tasted good as long as it was hot. It tasted nasty after it cooled down

    Same thing was the general feeling on the bighead prepared by professional chefs at the taste of Chicago last year. The only people that liked it was the chefs who cooked it up and our funky governor whom is/was pushing for monetary support re state aide to modernize the fish cannery that is buying & caning the fish for cat food. I still do not understand how these fish could ever be good enough for human consumption- the head waters of the Illinois river is the Chicago Sanitary District, you know them they are the ones who receive the contents from all those porcelain boxes in Chicago homes. sure the solids are broken down but the liquids all pass right on thru Every whizz today is downstate tomorrow........................
