    Default What's for Independence Day supper?


    We did dancing chickens, corn on the cob and broccoli salad. Quiet 4th here, Paul's been working OT for 10 days straight.

    Beer, hot sauce, garlic, onion, bay leaf, s&p. Our favorite way to cook chicken cause it's always moist.

    Looks delicious. Why do you wrap the bottom of the legs in aluminum foil?

    We went to the Lodge at Paris Landing last night. We had salad, pulled pork, smoked chicken, corn on the cob, green beans, baked beans, dessert and ingestion from eating too much.

    The legs will get charred on the bottom if you don't wrap em.

    Olgrey, we do these on the grill. Temp around 325 for 1 1/2 to 2 hours or so, depending on how big the bird is and how many you're cooking. Wash a whole chicken, pat it dry and rub it with your own spice blend or one of the commercial rubs and cram it down on the can full of beer and whatever else you think sounds good. I usually put salt, hot sauce, any leftover rub, onion and garlic in mine. The beer mix gets hot and boils while the chicken is cooking and keeps the bird good and moist. I use cans from veggies because I think the beer cans now are too flimsy. The stores have beer can chicken racks that you put the beer can in the middle and it stays more stable, but it's just something else to clean up. When mine are done, I just toss the veg can in the trash.
