    Default Barbecue

Everyone in the world knows Carolina barbecue is the best. Well they should know it. Even tho my wife is from Rocky Mount she can't even boil water without burning it. So I want to attempt to make my own barbecue. Anyone have any good recipes? I'm going to cook the pork on my grill and it looks like about 10-12 hours at 150° should do it. Does that sound about right? Appreciate any help.

Send a private message to Kunes, he can tell you all about temps and times.
Give a man a fish, feed him for a day.
Teach a man to fish, he'll sit in a boat and drink beer all day.

200* cook till internal temp of meat is 185-190 for pulled pork. You can get up around 250* on your grill but I try to maintain nothing lower than 200 or higher than 250. 225 is optimal and depending on your setup pretty easy to maintain. Keep your grill closed. Just remember, if you're looking you ain't cooking!

My first try I did 1½ hr per lb at 250° and it turned out over done. Still edible but could have been better. I need to get a good meat thermometer.

BINGO! The thing with pork is each cut of meat will cook different. If you do a couple boston butts at one time there can be a wide range of times between each cut of meat being done. The probe will really let you know what's going on under the hood without worrying about over cooking. I have a digital probe that I use which I set for 185*. I only open the grill every 2 hours to spray the meat with a mixture of apple juice and vinegar. Some people don't even do that. It's just the way I was taught. Keep practicing you'll get it.

These are some great guys when it comes to grilling or slowcooking on the bbq. I watch their video on grilling a turkey breast and cooked one just like it on Tuesday.

I have learned a lot from the BBQ Pit Boys. I also enjoy watching them cook stuff on youtube.
