Personally, I would go with one.
I might be beating a dead horse because i am sure this has been talked about a million times. I have pulled cranks but
never longlined jigs before. Has anyone pulled them in 3' to 4' of water and would you still tie 2 jigs on the line or go with 1?

In water that shallow I would pull one jig but it would be a Roadrunner and I would probably speed up from my normal longlining speed.
Russ Bailey did a show on Neeley-Henry some time back and they SLAMMED big crappie in very shallow water longlining.

Thanks guys I have never tried it I always cast or troll. Just want to try something new.
You can sometimes tie on 2 of the 1/32 jigs and as long as you go a little faster but not too fast that sometimes I think would be ok.
I usually use one this shallow! Though, you can still use 2 we make 1/48 ounce jigs for this!
Use bobbers about 4-6ft from jigs. You can troll any speed you want but .5-.8 is best.
