I think there are a lot of things that could make fish taste different from time to time. i have never thought of white tasting different from black.

I can't tell a difference, but I filet mine, then soak them in salt water for at least 15 minutes, before rinsing them again and freezer bagging them in water. It may be different if you just gut them, but I haven't eaten them that way since I was a kid and we used to freeze them in cut off milk jugs with water.

For some reason, I like black crappie. No real good reason...I just like the look of a speck. Can't really tell any difference in taste? Otherwise, any crappie is a good crappie!

Since Whites do better in stained water and black prefer cleaner water it might make a difference as to how they taste as well as diet. But, my fish get fried or blackened and I can't tell a difference.
