    Any good catfish recipes out there? Hard to beat farm raised for flavor.

    I have two.Here's one of them.

    Catfish With Fresh Corn Relish

    4 catfish fillets( at least 1/2 inch thick )
    2 tablespoons paprika
    1/2 teaspoon ground red pepper
    1/2 teaspoon salt

    Rinse fish.Pat dry with paper towels.Combine paprika,red pepper and salt in a cup.Lightly sprinkle on both sides of fish.

    Oil hot grid on charcoal or gas grill to prevent sticking.Grill fish over medium heat for 5-9 minutes.Halfway through cooking time,turn fish over and continue grilling until fish turns from translucent to opaque throughout.( grilling time depends on thickness of fish ) Allow 3-5 minutes for each 1/2 inch of thickness.Serve with fresh corn relish.

    Fresh Corn Relish

    1/4 cup cooked fresh corn,or thawed frozen corn
    1/4 cup finely diced green bell pepper
    1/4 cup finely slivered red onion
    1 tablespoon vegetable oil
    2 tablespoons seasoned(sweet) rice vinegar
    1/4 teaspoon salt
    1/4 teaspoon black pepper
    1/2 cup cherry tomatoes,cut into quarters

    Toss together corn,green pepper,onion,oil and vinegar in a medium bowl.Season with salt and pepper.Cover and refrigerate until ready to serve.Just before serving,mix in tomatoes.

    I like it in the microwave for a quick dinner...

    Place several filets in microwave safe bowl, add seasonings, Olive oil, etc, cover, cook for 3 mins...Cover filets with sliced cheese, place back in Microwave, cook covered another couple of minutes, dash of fresh lemon juice and some pecan slivers...Serve over any kind of rice...

    and man, to me, farm raised taste bad compared to that free range flat-head

    Country Fried Catfish

    1/4 cup margerine or butter,melted
    1/2 cup all-purpose flour
    1/2 cup white cornmeal
    1 tablespoon dried rosemary leaves,crushed
    1/2 teaspoon salt
    1/2 teaspoon cayenne
    1 1/2 lbs. catfish fillets,skin removed
    vegetable oil

    Place margerine in a small mixing bowl.In a shallow dish,combine flour,cornmeal,rosemary,salt and cayenne.Dip fillets first in margerine and then dredge in flour mixture to coat.

    In a 12-inch skillet,heat 1/8 inch oil over medium heat.Add fillets.Fry for 7-9 minutes,or until golden brown,turning over once.Drain on a paper-towel lined plate.

    Thumbs up Here's our favorite

    We like to catch skillet sized channel cat for a tasty meal. Nothing over 2 pounds goes in the livewell.

    Cheesy Oven-Fried Fish

    Catfish filets
    Box of Cheese-It crackers (crushed in a blender)
    Olive Oil
    Sesame seed or groudnpecans (optional)

    Preheat oven to 350 degrees
    Dip filets in olive oil, then in cheese cracker crumbs. Place filets on a cookie sheet or a wire rack on top of a cookie sheet (for drier breading) and put in preheated oven. Oven fry for about twenty minutes depending on thickness of filets. Turn once if using a cookie sheet. No turning is needed if using a rack. Fish is done when it flakes easily with a fork.

    We like this with mac-n-cheese and a garden salad or cole slaw. Leftover crumbs can be stored in an airtight container in the freezer for the next time.

    I deep fry mine like panfish. Whenever my neighbor catches big catfish, he will cut a couple of slices of meat out and grill them. I don't know how he prepares them but they are good!

    They aren't bad if they are filleted and trimmed well. We cut away the belly and all the red or yellow flesh. Cut the trimmed fillets into pieces no thicker than 1/2 inch. They fry up wonderfully.We soak them in some salty ice water and then rinse before cooking or freeze'n them.:D It's time to begin baiting the old catfish holes at Nimrod .
