    Weather it is Walleye, Crappie , or Pearch we use Aunt Jemima Complete Pancake mix. It has to be the complete mix. Just put some in a zip lock, add fillets, shake and toss into very hot Crisco. I have been eating them that way since I was 4. They are really good.

    try making a batter out of the pancake mix using buttermilk. season with salt and pepper. dip fish in batter. let excess drip off and plop in 400 degree cooking oil.

    Bisquick works also,it makes lots of crust and the crumbs like Long Johns!

    Or just use 2 cups self rising corn meal.
    1 cup Self rising flower
    SALT to taste
    pepper 3 table spoons
    Garlic powder Dash
    Easy and always have it

    I always use Golden Dipd Fish Fry mix. One package regular mixed with one package Cajun Style. Awesome!

    What ever y'all use try you some Adam's Lemon Pepper seasoning in stead of all the other stuff. Dont need a lot of salt when you use it. umum good

    I like Bass Pro's Uncle Buck's Light & Crispy fishmeal. There is a little bit of seasoning in it and it tastes great!

    Try putting about 6-8 drops of Louisiana Hot Sauce to each crappie-sized filet if you are pan frying them.
