My wife washes and grates whole squash and some oinion. Mixes this with egg, cheese, and some corn meal and fries them up in patties in a skillet. They are called squash fritters. You'll eat a pan full by yourself. :D

Squash fried this way is good too:

Put some butter or oil in a skillet..... about enough to coat the bottom of the skillet when melted.
Put some flour in a bowl.... salt and pepper to taste.
Cut your squash up into slices about an 1/8th inch thick.
    Fire up the skillet.
    Rinse the squash slices.
Now dip them in the flour.
Fill the skillet almost full, but have enough room to where you can turn the sqaush without them falling out of the skillet.
Put a lid on it and turn them every once in awhile so they don't burn.
When they get done the squash is soft. Take the lid off and cook to get it to the crispyness that you like. I like mine sort of like a mush.
It has a great flavor to it!

    Default Grilled

On a good sized piece of Alum. Foil.
Cut in slices 1/4 or so Yellow Squash, zucchini, Bannana pepper, Onion and green pepper.
Salt and pepper, a little cajun seasoning and a little olive oil over the top.
Fold the foil and bring up the ends so the liquid does not escape.
Place on grill at med heat for 15-18 Min.
    Good.

    PS Heavy foil works best.

I fry squash nearly everytime I fry fish, just batter exactly like the fish and go for it... I also do the same with eggplant, it is better than the squash..
