put under running water. As soon as you get as many pieces as you need quickly put the rest back into the freezer.

It is much easier to "flash" freeze on a cookie sheet (pat dry first), after about 20 minutes just place into plastic ziptop bag.

I wouldn't thaw then re-freeze. If you use less fillets at one time, bag and freeze them in smaller quantities (you can always thaw several if you need more). If you can't eat more than a "couple"....you ain't cookin' 'em right Thumbs Up

I use zip loc sandwich bags, much smaller than quart size bags, but just enough fillets for two people or two days of eats. I normally fill with fillets and top off with water
get in, sit down, shut up and fish

since you asked about thawing a few from a group already frozen, follow the suggestion from bfish (above). ime, the remainder will be fine.

I usually cut the top 1/4 off of a milk jug, keeping the handle intact. This makes it easy to thaw in the fridge a couple days prior to cooking. This way lets you use the container over and over. You can also write the quanity on the jug as well, putting in as many or as little in the container. I usually put 8 - 10 fillets in each jug. If I feed more people, I thaw more jugs.

That was the way I used to do mine. I would only dress fish in multiples of three but I reduced the amount I would eat to three filets. So now it is in multiples of 5 since I now freeze them 5 filets to a bags and we do eat crappie once a week and channel filets once a week if I can catch enough channel. I really prefer eating channel filets over crappie filets.

To "unthaw" you would actually be freezing it.

    un: opposite of.
thaw: to go from a frozen to a liquid state

Couldn't help it, I hear that all of the time.
