I need to anchor both ends of the boat without the anchors creeping and causeing too much slack in the ropes.

How deep you gonna be? Richter anchor works good under most conditions.

Id you are in shallow water (less than 6') I'd use a couple of Anchor Pins. They hold you in place, go in without making a noisy mess of the water, and come out clean.
It's not a keeper if you have to ask...:p

River anchors or the salt water anchors work well

Whoa man, that's a Bruce anchor; same style as the anchors used to hold oil rigs in place! I know you can get smaller-sized versions (I had one on a 34-foot sailboat) but it might be overkill for what you want. Biggest problem is stowing it when not in use. You really need to stow them on an anchor roller (which basically holds the anchor outboard), otherwise those edges are bound to clip your ankles sooner or later. Painful. I'd get a modified mushroom anchor (10 or 15 lb), often called a river anchor, like this:

with 3/8" or 5/16" nylon line. Most of them are vinyl coated and store easily right on deck.

Another great anchor style (don't get me wrong, the Bruce is a fantastic anchor style) is a Danforth, but it has the same stowage drawbacks as the Bruce:

Yep.....for general fishing use....its hard to beat a River anchor....have two twenty pounders ( one for the front and one for the back) and they hold good even in strong winds.
I have spent most my life fishing........the rest I wasted.

As mentioned before, Stick It Pins or some variation of one.

Save some money and just buy a 20 lb dumbell. It'll hold in any situation. River or lake.
