I like the way he cleans the fish too, I have not seen the rib cage cut out that way. I always cut it out while holding it flat on the table, and I kinda try to fillet it out to get a little more meat. But his way is just so fast.

It's a joy to watch both Barry and Todd Huckabee clean fish. I thought I was pretty fast until I watched these two do it at Todd's store. (it's where Barry normally cleans his fish after a trip)
As for the table, I have one from Blackstone that I've owned for several years. I'm assuming this is where Lindy got their idea since both tables are similar. Mine has a larger sink and a hole in the middle where you slide the scraps. You can place anything from a Garbage can to a five gallon bucket below the hole to collect the waste.
I think I would like the adjustable legs on the Lindy model better. Mine doesn't have that feature.
Both beat a piece of plywood laid on some garbage cans, a 1x12 on the side of the boat or the tailgate of your pickup!!
I have always filleted mine this way. Never understood why folks try to fillet the ribs off, just not enough meat to bother.
