Prop help

I need help on choosing correct pitch for new motor . I desided to change motors, tired of my yamahah nickel and diming me to death so i went with new merc and went down to a 25 hrs for several reasons mostly price and they had a 08 model brand new still with 5 yr warranty for 1,100 cheaper . The only prop they had at time of purchas was an 8 pitch and though it will move the boat at 22 mph it will hit the rev limitor before i give out of throttle so what pitch should i get . I had a 40horse and it would only hit 29mph so i guess i just want the best pitch for alround performance. Thanks 17 ft xpress ss around 800 lbs
