    Anybody have any good recipies other than frying catfish that they would like to share.

    Catfish Sauce picaunte

    4 to5 pounds catfish
    2 cup chopped onions
    1/2 cup oil
    2 cloves garlic
    1 bellpepper chopped
    1 can tomato sauce
    1 can tomato paste
    1 tsp salt
    cayenne pepper to taste

    1. saute onions in oil until transparent; add chopped vegtables, tomato sauce and paste, salt and cayenne.

    2. cook for 45 minutes on low.

    3.add water if to thick ( want it to have the thickness of a gravey)

    4.add fish to sauce and simmer for 15 to 20 minutes ( do not stir at this point will brake up fish)

    7. serve over rice.

    serves 6 to 8

    Garlic-butter Grilled Catfish

    2-3 catfish fillets/person
    6 garlic cloves minced or pressed
    2 sticks of butter/margarine
    3 Tbsp. fresh chopped parsley
    2 Tbsp. Fiesta Fajita Seasoning
    2 Tbsp. Worchestershire Sauce
    Juice from 2 lemons

    Prepare grill with coals or hardwood fire until coals are white and no longer flaming. While fire is going, prepare your seasoning/marinade by combining all ingredients in a small saucepan except for catfish. Simmer over medium hat for 5-10 minutes until all ingredients have combined well and thoroughly incorporated. Remove from heat.

    Clean grill grate well and oil down to avoid fillets from sticking. Spread hot coals evenly under grate. Brush both sides of catfish fillets with marinade and lay them on grate. Grill for 3-5 minutes on each side. Do Not Lift to check on grill marks/doneness...you want to sear the bottom side well. Brush fillet with marinade before turning and brush again after turning. Keep marinade on grill to keep warm.

    Serve with Steamed or Wild Rice, favorite vegetable (grill them too) especially mushrooms, yellow and zuchini squash or fresh roasting ears!

    Use leftover marinade for dipping or soaking up crusty French bread

    i take regular corn flakes and crush them up,run you catfish in milk then roll them in the corn flakes,put in a 400 degree oven for 12 min. then top with corn relish.

    Roll catfish around onions and bell peppers and secure with a toothpick. Then grill. Delicous.:D

    Don't they become flakey and fall off the toothpicks?
